My name is Bethany Wallace, but my family calls me Bessie. I live in North Carolina with my husband, Micole, our son, Joshua, our 2 pups, and I am currently pregnant with our little girl. I have enjoyed cooking and baking since I was a kid. Along the way I have learned from different people, in my life, and have taken what was shared with me and made my kitchen a place to explore creativity. I have also had digestive trouble since I was a kid. It always seemed manageable, but when I was 24 those issues brought me to a place where I could no longer continue to eat a traditional western diet. I was forced to choose between being in pain or changing my lifestyle. I chose to change what I was eating, in pursuit of a healthier life, and I began to learn how to eat for my specific dietary needs. The problem I encountered when I started this process was that most of what I could eat was bland. Most of what I could find at the store did not taste great and I just knew there had to be a way to eat whole foods that were also delicious. The Lord even spoke to me during this process, when I would become tired and wanted to resort back to my previous way of eating, and corrected by attitude by reminding me that the processed foods I desired were actually the counterfeit to the real food he had given to nourish my body and sustain my life. And so, it became my mission to learn to cook and bake healthy foods that were also pleasing to eat. It has taken a lot of trial and error, but I love what I have learned through the process and how it has not only made my life better, but has also impacted the lives of those around me. You see, you don’t have to sacrifice quality for flavor and the truth is that God actually gave us foods that are both nourishing and enjoyable. We just have to learn how to use them.
